Beer cheese is our go-to dish whenever we need to please a large number of people. We’ve made the most ingenious comfort food ever by cooking pigs in a blanket in a skillet, spreading it on brats and sliders, and even folding it into macaroni. We had never attempted it in the cold.

Despite common belief, beer cheese is just as delicious when chilled as it is when warm and gooey from being heated. Unexpectedly popular in the Delish kitchen was this recipe for cold beer cheese, also known as pub beer cheese. It’s as easy to whip up as it is to scarf down, and it’s salty, cheesy, and creamy all at once.

This dish is perfect for a get-together of any kind. It only requires one bowl and a few minutes to whip up. That’s simple, isn’t it? Like any good dip, it all begins with a mountain of cream cheese. The following two ingredients, cheddar and garlic powder, are mandatory. But the caraway seeds are what make this dip truly outstanding. As an added bonus, they impart a subtle yet intriguing herby, savory flavor. Add some horseradish or a good, robust mustard if you really want to kick up the flavor.

The final step is to add beer, the recipe’s namesake. You can use anything from a smooth stout to a hoppy IPA. You could even choose a non-alcoholic beverage, though you might want to start with a smaller serving size given that many of these drinks taste diluted when compared to their alcoholic counterparts.

We recommend using large, hard, or soft pretzels (perhaps homemade) to accompany this dish, but smaller ones will do in a pinch. There aren’t many things that don’t pair well with this dip: You should sample a wide variety of foods, from crackers to grapes to toasted bread.

(2 blocks) cream cheese, room temperature

two cups of shredded Cheddar

1/4 c. beer

1 tablespoon chopped chives

Caraway seeds, one teaspoon

1 teaspoon of dried minced garlic

Table salt

A dash of freshly ground black pepper


Combine everything in a large bowl and stir to combine. Put salt and pepper on it. Serve with dipping tools of your choosing and garnish with chives.
