It’s a baby made of two of my all-time favorite morning meals! Which breakfast dish is more popular, Eggs Benedict or Huevos Rancheros?! With this Mexican take on Eggs Benedict, you won’t have to decide. My fiance has requested this vegetarian Mexican dish twice in the past week. Using an egg poaching hack that only requires a muffin tin and a food processor for the Hollandaise sauce, this is a breeze. Skip the butter in the Hollandaise (it’s not necessary!) and make a leaner “chorizo” to cut down on the excess fat. The chorizo was made with tofu, but ground turkey works just as well. You can also use guacamole or avocados as a topping.

Having this easy breakfast is the best way to experience the vibrant flavors and aromatic spices of Mexico. In no time, this breakfast will be cherished by all members of the household.

8 Eggs

Ingredients: 8 Tablespoons of Water

Two Avocados (or my guacamole recipe, see link in notes)

Two fresh jalapeos, diced very small

3 clumps Newly-picked cilantro A List of CHORIZO’s Ingredients 1 lb. ground turkey or 1 pkg. firm tofu

Three minced garlic cloves

Approximately 1 Tablespoon of Olive Oil

A pinch of Oregano

Two Tablespoons of Chili Powder

One-fourth teaspoon Pepper One-fourth teaspoon Ground Red Pepper (or cayenne)

a pinch of cloves

To Season, About a Teaspoon

Smoked paprika, 2 teaspoons

The Equivalent of One-Fourth Teaspoon of Cumin Ingredients for CHIPOTLE Hollandaise Sauce Eggs, separated, 4

The Equivalent of One-Fourth Teaspoon of Salt

2 tablespoons of adobo sauce, in which Chipotle peppers have been marinated

Fill each cup of a muffin tin with one tablespoon of water.
